Almond Cranberry Oatmeal Cookies with Chocolate Chips
- Makes about 16 cookies
- Ingredients:
- 3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 egg
1/2 cup softened butter
1 1/2 cups rolled oats
1/2 cup chopped dried cranberries
1/2 cup sliced almonds
1/3 cup chocolate chips
1/3 cup white chocolate chips
- Directions:
- Preheat oven to 350 degrees. Grease cookie sheets. Stir together the flour, baking soda, salt and cinnamon; set aside.
In a large bowl, cream together the butter, brown sugar, egg and vanilla. Stir in the dry ingredients using a wooden spoon.
Mix in the oats, chocolate chips, cranberries and almonds. Drop by rounded tablespoonfuls onto cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, or until lightly browned.
Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
